Whole Wheat Sugar Bun 全麦粗糖面包

Whole Wheat Sugar Bun

150 克 水
5 克 酵母
145 克 牛奶
1 个 蛋
400 克 高筋面粉
100 克 全麦面粉
1 汤匙 奶粉
2 克 盐
60 克 糖
40 克 溶解 牛油

搽表面蛋液 (  1个蛋+ 1汤匙水拌均过滤)。

Bread Ingredients:
150 g water
5 g yeast
145 g milk
1 egg
400 bread flour
100 g whole wheat flour
1 tablespoon milk powder
2 g salt
60 g sugar
40 g melted butter

Topping ingredients:
Cubes of cold butter
Surface egg glaze (1 egg, + 1 tablespoon water , mix well and  filter it).
Some sugar.

Step for making whole wheat sugar bun.
1) 酵母和水拌均。 
 Mix well yeast and water.

2) 加入牛奶和蛋拌均。
Add in milk and egg.

3) 加入高粉全麦粉,奶粉,盐和糖拌均。
Then add in bread flour, whole wheat flour, milk powder, salt and sugar.

4) 揉约5分钟,加入奶油。
Knead for 5 minutes and add in butter.

5) 继续揉至有薄膜的面团。
Continue kneading the dough until it can  be pulled into thin film.

6) 待发至双倍大。
Let it rise to double size .

1&2) 把发好的面团分成每个50克小团,放入搽油的烘盘待发50分钟。
After an hour, divide into 50 g each dough.  
Put it into the greased tray and let it rise for another 50 minutes.

3) 在每个面团中间压一个洞。
Make a hole in the center of each dough.
Place a cube of butter in each dough.
Brush with a layer of  egg glaze on the surface and sprinkle some sugar on top.

4) 放入预热烤箱以180度C烘20分钟。
Put into preheated oven and bake at 180 degree C for 20 minutes.
