Sweet glutinous rice cake 甜粗叶糕

粗叶糕
回了一趟妈妈家,
妈妈摘了许多粗叶给拿回来,
也把方子和做法都说了一遍,
胆粗粗的把它做了出来。。。
外表做得可丑了。。。
不过可真好吃咯。。
非常感谢妈妈的分享。。。

材料:
900克 粗叶,
230克糖,60 毫升食油,
500克 糯米粉
适量香蕉叶

Ingredients:
900g Ramie leaf
230 g sugar, 60 ml cooking oil
500 g glutinous rice flour
some banana leaf.

甜粗叶糕的做法。。。。
Step for making sweet glutinous rice cake
ramie leaf
1.) 煮沸一锅水,放入洗干净的粗叶以中火煮1个小时。
Boil a pot of water, add in clean ramie leaves cook for 1 hour over medium heat.
2.) 取出煮好的粗叶,放入食物搅拌器拌成泥。
Remove cooked ramie leaf,  then put into food blender and mix well.
3.) 把粗叶泥倒入锅,加入糖和油,煮至糖溶,
再倒入糯米粉里拌均。
Pour the mixture into the pan,
Add in sugar and oil, cook until the sugar is dissolved,
then mix well with glutinous rice flour.
4.) 揉至光滑的面团,分成 50克 小圆团,放上搽油的香蕉叶上再压扁。
Knead to form smooth dough,
Divide into 50 g round dough,
Place on top the greased banana leaf and flatten it.
5.) 放入蒸锅以小火蒸15分钟, 取出搽上少许油。
Steam with low heat for 15 minutes,
then remove and brush with a layer of oil.

Tapioca ball 木薯球

Tapioca ball 木薯球
好好吃的木薯球。。。

虽然颜色炸得深了些。。

但不影响它的口感。。。


材料:
500克 木薯,
80克糖,50克面粉,50毫升椰奶。

Ingredients: 
500 g tapioca,
80 g sugar, 50 g plain flour, 50 ml coconut milk.


1.) 木薯去皮,切小块蒸熟。
Peel off skin, cut into small pieces and steam until soft.

2.) 趁热把木薯压成泥,加入其余材料揉成软团。
Mash the tapioca while hot, 
add in all ingredients and knead to form a soft dough.

3.) 分成每粒20克小圆团。烧热油,用中火炸至金黄色。
Divide into 20g round shape dough.
Heat up oil, fry until golden brown with medium heat.

Durian pudding 榴槤布丁

Durian pudding 榴槤布丁
又是榴槤季節的時候,買了些榴槤回來做布丁,
原方食譜是加入鮮奶和淡奶油,
而這兩樣材料都沒有,
為了解榴槤癮,用了300毫升過滤水來代替,
覺得一樣是那麼的美味。。。^^

食譜來自大少奶's Delicatessen的博客,
大家可到大少奶的博客看原方食譜。

材料:
10克 吉利丁粉,3 湯匙水
300克 榴槤泥,300 毫升過慮水
適量糖粉。

Ingredients:
10 g gelatine powder, 3 tablespoon water
300 g fresh durian paste, 300 ml filter water
some icing sugar.


榴槤布丁的做法。。。。
Step for making durian pudding.......
1.) 吉利丁加水隔水溶化。
Double boil gelatin with water until dissolve.


2.) 把榴槤泥和鲜奶油放入食物搅拌器搅拌成糊。
Mix well durian paste and water with a food mixer.

4.) 加溶解吉利丁拌均,再加入適量糖粉拌均。
Mix well with gelatin, then add in some icing sugar and mix well.

5.) 倒入模,盖上錫紙放入冰箱冷藏至凝固即可。
Pour into mould, cover with foil and keep in the fridge until harden.

Purple ang koo 紫薯红龟糕

紫薯椰丝红龟糕
买了颜色很漂亮的紫薯,把它做了紫薯红龟糕。。。
皮料食谱来自Joceline Iyn 的Butter.Flour & Me 爱的心灵之约博客:


皮料:
100克 紫薯泥,1 汤匙 黄砂糖,130 - 150克 清水,200克 糯米粉,1 汤匙食油
适量香蕉叶或香兰叶。

馅料:
150克 椰糖,150毫升水,
50克 白砂糖,300克 嫩椰丝,
2 片香兰叶。 

Pastry Ingredients:
100 g mashed purple sweet potato, 
1 tablespoon brown sugar,
130 - 150 ml water
200 g glutinous rice flour
1 tablespoon cooking oil,
some banana leaves or pandan leaves.

Filling ingredients:
150 g coconut sugar,
150 ml water,
50 g white sugar,
300 g young shredded coconut,
2 pandan leaves.
紫薯椰丝红龟糕
紫薯红龟糕的做法。。。。
Step for making purple ang koo 


For the filling:
1.) 将椰糖碎。
Crushed the coconut sugar.
2.) 椰糖加水和香兰叶煮至糖溶,再加入白砂糖和嫩椰丝。
Put coconut sugar, pandan leaves and water into wok, and cook until coconut sugar dissolve.
Then, add in white sugar and shredded coconut.
3.) 炒至水干。
Cook until the mixture is dried.

For the pastry:
1.) 把紫薯蒸熟压成泥,加所有材料。
Steam the purple sweet potato, then mash it. Then add in all pastry ingredients.

2.) 揉约5分钟至成软团,包入馅料。
Knead for 5 minutes to form a soft dough. 
 Then, wrap in filling as shown above.

皮料:40克
馅料:20克
Pastry: 40g
Filling: 20g

3.) 洒些面粉在模内,把面团放入模型压出花纹再敲出。
Sprinkle some flour into the mould.
Then, press the dough into it,
 and knock it out.

4.) 放在搽油的香蕉叶或香兰叶上,
放入水沸的蒸锅,以小火蒸8分钟,
取出搽上一层油即可。
Place ang koo on greased banana leave or pandan leave.
Steam with low heat for 8 minutes.
Finally, remove and brush ang koo with a layer of oil.
