农历八月十五居秋季之中,故叫"中秋"。
这个时候,农作物收成已毕,正是大事庆祝之时,
加上这时月色特别皎洁,故这天最适合赏月。
中秋节应节的食品,就不得不数月饼,每年都有各式精美的月饼供应市场。
在中秋节的晚上,小孩提灯笼玩乐,有些人家更在中秋之夜,
供置月饼,柚子,花生,菱角,酒和香案,一边拜月一边赏月。

100 克 糖浆
50 克 花生油
5 克 碱水
150 克 低粉
8 颗 咸蛋黄
馅料:
喜爱的馅料
搽表面蛋液:
1个蛋黄,1茶匙鲜奶(拌均过滤)。

100 g sugar syrup
50 ml peanut oil
5 g alkaline water
150 g plain flour

Surface egg glaze ingredients:
1 egg, 1 teaspoon fresh milk (mix well and filter it).

1) 咸蛋黄以150 度C 烘10 分钟。
Bake salted egg yolk at 150 degree C for 10 minutes.
2) 糖浆,油和碱水拌均。
Mix well sugar syrup, oil and alkaline water.
3) 筛入粉拌成软团即可。
盖上保鲜膜静置1个小时至面团不粘手。

皮料:40克

Sprinkle some flour on the dough.
Put the dough into the mould and shape it.
Note: Pastry: 40 g
Filling: salted egg yolk + filling 70 g
5) 放入预热烘炉以170度 C 烘10分钟,取出待凉。

Remove from oven and let it cool.
