Shang Hai Moon Cake 上海月饼

上海月饼
今年的中秋带来上海月饼,
祝大家中秋节快乐。

饼皮材料:
75 克 牛油
75 克 人造牛油
100 克 糖粉
2 个 蛋
350 克 低筋面粉
50 克 蛋黄粉 ( 我用全脂奶粉 )

馅料:
适量 莲蓉
咸蛋黄 ( 加入适量食油浸泡30分钟)

表面装饰:
杏仁片和南瓜子

搽表面蛋液:
2个蛋黄 (拌均过滤)。

Pastry ingredients:
75 g butter
75 g margarine
100 g icing sugar
2 eggs
350 g superfine flour
50 custard powder ( I use full cream milk powder).

Filling:
Lotus seed paste
Salted egg yolk ( sock with cooking oil for 30 minutes )

Decoration:
Almond flake and pumpkin seed.

Surface egg glaze ingredients:
2 egg yolk (mix well and  filter it).


1) 咸蛋黄 ( 加入适量食油浸泡30分钟)

饼皮做法。
Step for making pastry.
2) 牛油,人造牛油和糖粉拌均。
逐一加入蛋搅拌均匀。
筛入低粉和奶粉拌成软团。
Mix well butter, margarine and icing sugar.
Add in egg one at a time.
Sift in superfine flour and milk powder to form a soft dough.


3) 做造型 Shape it.
皮料:40 克
馅料:45 克
                      1 个咸蛋黄
Note: Pastry: 40 g
           Filling: 45 g
                 1 salted egg yolk

3) 表面搽上蛋液后,放上杏仁片或南瓜子装饰,放入预热烤箱以200度C烘至金黄色即可。
Brush with a layer of  egg glaze on top。
Garnish with almond flake or pumpkin seed.
Put into preheated oven bake at 200 degrees C until golden brown.
