Mid-Autumn Festival-Non-bake mooncake 中秋节-免烤月饼

每年农历八月十五居秋季之中,故叫“中秋”。
这个时候,农作物收成已毕,正是大事庆祝之时,加上这时期的月色特别皎洁,
所谓“月到中秋分外明”,故这天最适合赏月。
村庄都装饰着五颜六色的灯笼和美味佳肴。
最重要的是应节的美味月饼是一定要的。

月饼有莲蓉月饼和豆沙月饼。
有的混合坚果,干果来增添口味。


The fifteenth day of the 8th lunar month in the Chinese calender is called Mid-Autumn Festival.
At this time, farmers usually have finished harvesting and were celebrating their success.
The weather was usually sunny and everning sky was bright with the full moon.
The villages were decorated with colourful lanterns and delicious food served.
Most importantly a special delicacy called the mooncake was a must.

Mooncake is a pastry filled with lotus paste or red bean paste.
Sometimes, mixed nuts, dry fruits are added to have varieties.






这是免烤月饼,对新手来说,
我想免烤月饼会比较容易操作。。。
第一次制作月饼,请多指教。。。


饼皮材料:
45克糯米粉,35克粘米粉,20克澄粉,
185毫升鲜奶,20毫升玉米油,50克糖,
1汤匙香兰汁或1/2 茶匙香草精。

馅料:
莲蓉和豆沙 ( 购置于烘培店)
少许玉米粉
Pastry ingredients : 
45g glutinous rice flour 
35g rice flour
20g wheat starch
185ml fresh milk
20ml corn oil
50g sugar.
1tablespoon pandan juice or 
1/2 teaspoon vanilla essence.

Filling:
lotus paste and red bean paste ( got it from baking shop)
some corn flour.

免烤月饼的做法。。。。
Step for making non-bake mooncake.....
1.) 把饼皮的材料全部拌均。
Mix well all pastry ingredients.

2.) 盖上碟以大火蒸15分钟。
Cover and steam 15 minutes with high heat.

3.) 蒸好用筷子拌均待凉。
Use chopstick mix well and let cool.

4.) 装入塑胶袋放冰箱3个小时。
Put into a plastic bag,
and keep in the fridge for 3 hours.

5.) 10克的模型。
皮料:5克,
馅料:5克。
With 10g mould.
Pastry : 5g
Filling : 5g

6.) 洒少许玉米粉在塑胶袋,放上皮团压平。
Sprinkle a litter corn flour on plastic bag,
and flattened the dough.

7.) 包入馅料。
Stuff with filling.

8.) 放入模型,压紧扣出。
Put it in mould, press lightly and knock out.

9.) 好了。。。
Done.......

10.) 50克的模型。
皮料:20克
馅料:30克

With 50g mould.
Pastry : 20g
Filling : 30g

11.) 好了。。
Done.
