Orange Cotton Cake 鲜橙棉花蛋糕

Orange Cotton Cake

60 克 玉米油
80 克 低粉
1 个全蛋 ( B 型 )
5 个蛋黄 ( B 型 )
1 粒 鲜橙 ( 中型 )
1 汤匙 橙皮碎
5 个蛋白 (B 型)
70 克 糖

60 g corn oil
80 g superfine flour
1 whole egg (B size)
5 egg yolks (B size)
1 orange ( medium size)
1 tablespoon orange zest
5 egg white (B size)
70 g sugar.

Step for making cotton cake.
1&2) 隔水炖热玉米油, 熄火取出筛入低粉拌均。
Double boil corn oil until hot.
Then sift in flour and mix well.

3&4) 加入一个全蛋拌均,然后逐一加入蛋黄搅拌均。
Add in 1 whole egg and mix well.
Then add in 5 egg yolks, one at a time and mix well.
Finally,  add in orange juice and orange zest.

5&6) 蛋白加糖打至湿性发泡。
Whisk egg white and sugar until soft peaks formation.

7&8) 把1/3 的蛋白糊加入蛋黄糊里拌均,
Mix well .... 1/3 egg white mixture in egg yolk batter.
Then, gently mix well the remaining of the two batters.

9) 倒入搽油铺上烘培纸的模里,以:
150度C 水浴法烘10分钟。
130 度 60 分钟
Pour into a greased and lined mould,
steam bake at:
 150 degree C for 10 minutes.
130 degree C for 60 minutes.
Remove the cake from oven and let it stand for 5 minutes.
Then take out from mould and leave to cool.
