Christmas fruit cake 圣诞干果蛋糕

Christmas fruit cake
在网上看到这么一个食谱,先把蛋糕蒸熟,才放到烤箱烤的圣诞水果蛋糕。
满满的干果,把糖的份量一减再减,吃到的都是果干的甜。
刚好朋友从加拿大回来,送了小瓶的冰酒来,把酒分别都倒入2个蛋糕里,
也让蛋糕增添了不少风味。


材料:
800克干杂果
2 粒 鲜橙汁
2 粒 鲜橙皮屑
250克奶油
150 红糖
4 粒大蛋
350 克 普通面粉
75 克 杏仁粉
1 茶匙 肉桂粉
1/2 茶匙 姜粉
1 茶匙 泡打粉
适量白兰地或威士忌搽蛋糕用。

Imgredients:
800 g mix fruits
2 orange juice
2 orange zest
250 g butter
150 g brown sugar
 4 large eggs
350 g plain flour
75 g ground almond
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1 teaspoon baking powder
some brandy or whisky.

圣诞干果蛋糕的做法。
Step for making Christmas fruit cake.
干果
1) 干果,鲜橙汁和橙皮屑拌均搁置2小时。
Mix well the fruits, orange juice and orange zest.
Set aside for 2 hours.

2) 奶油和红糖打至奶油状。
 逐一加入蛋打均。
Whisk butter and brown sugar until creamy.
Mix well eggs one at a time.

3.) 筛入面粉, 杏仁粉,肉桂粉,姜粉和泡打粉拌均。
Sift in flour, ground almond, ground cinnamon, ground ginger and baking powder.

4) 倒入干果拌均。
Add in fruits and mix well.

5) 倒入搽油铺上烘培纸的模里,放入水滚的蒸锅,以中小火蒸1个小时。
Pour into a greased and lined mould.
 Steam with medium low heat for 1 hour.

6) 从蒸锅取出蛋糕,直接放到预热的烤箱,以140度C烤45分钟。
取出待凉,切掉表面一层。
Remove from the steamer and put it into the oven .
Bake at 140 degree C for 45 minutes.
Remove from the oven and let it cool.
Then, cut away the surface layer.

圣诞干果蛋糕
7) 搽上一层白兰地或威士忌,用锡纸包好搁置2天后再食(我用冰酒).
Brush a layer of brandy or whisky ( I used wine),
Wrap it with aluminium foil and keep it for 2 days.
